Here is a simple and effective recipe
for the classic Middle-Eastern dish...Enjoy!


1 14oz (400) can chickpeas
2 medium cloves garlic (chopped)
Juice of one lemon
3 tbsp tahini
4 tbsp olive oil
tsp black pepper
3-4 fl oz (125ml) water



  1. Drain the chickpeas, put them in a bowl and mash until they are fairly smooth.
  2. Add the garlic, lemon juice, tahini, and the salt and pepper.
  3. Blend them all together in a food-processor or blender, and add enough of the water to make a smooth paste.
  4. Spoon into a serving dish. Drizzle with olive oil, sprinkle with paprika, and serve.
